The Seed to Table garden began in the fall of 2010 as an initiative to start a student run garden on the St. Lawrence campus. Since then, our group has grown in size and has seen the first year of a successful growing season. We received a grant from the Mellon Committee to start the garden in the spring of 2011.
Our mission is to provide students with a place to learn how to grow their own food, while at the same time providing as much food as we can to the greater community. The garden is a place where students can come together to learn skills that will transfer to their lives after graduation and will also greatly enrich their time at St. Lawrence. All decisions are made by a committee of students, and there are two student interns hired each year to work during the summer months.
In the spring of 2011, we turned over a plot approximately fifty by sixty-five feet. This garden plot is currently located at the Ecological Sustainability Landscape on Rt. 68 just outside of Canton. The garden had a great first season producing vegetables that supplied the Campus Kitchens Project with the majority of their vegetables during the summer and fall months and provided Dana Dining Hall with vegetables once or twice a week for almost two months once the semester started.
We are looking forward to our second season as we begin ordering seeds, laying out the garden plans, and starting seeds in the greenhouse. Dana Dining Hall will be buying produce from us this year at wholesale prices, and whatever does not go to them will be given to the Campus Kitchens Project.
We will be having weekly work parties starting soon as we begin prepping the garden for planting. All are welcome to help, no experience necessary, just enthusiasm to learn and dig in the dirt.
