English Prof. Explains Why Gluten-Free Is Not a Trend

Paul Graham '99, associate professor of English, explained in the Syracuse Post-Standard that gluten-free is not just a trend diet, especially for those who have celiac disease.

"It's very simple: Someone with celiac disease shops and eats gluten-free, or they live in a state far below their best capabilities," Graham wrote.

Graham is the author of In Memory of Bread, a book he wrote after being diagnose with celiac disease in 2012.
