Dining Services Production Manager Douglas Mattice was part of an award-winning
team of campus food-service professionals in the 15th annual Chef Culinary Conference team competition held at UMass Amherst in June.
Teams of four were judged by a panel of experts; some teams represented a
single institution, but any conference participant could compete by being assigned to a team. Mattice was a member of a bronze-medal-winning team that included representatives from the University of North Dakota, the University of Texas and SUNY Potsdam.
The week-long conference has as its theme "World Street Food: Local Flavor" and included sessions on street foods from Latin America, the Mediterranean and Southeast Asia. In addition,
medical experts gave presentations on topics such as a gluten-free diet.
